Hotel and catering establishments and establishments in the food industry are obliged to install grease traps. Grease traps must be emptied and cleaned regularly, at least once a year, in order to guarantee their proper functioning.

Discharging waste water following the preparation of food is regulated in Article 3.131 of the Activities (Environmental Management) Decree. This article prescribes that a grease trap must meet the requirements of and is used in accordance with NEN-EN 1825. A grease trap must be emptied and cleaned regularly in order to guarantee its proper functioning.
Grease traps that meet the new NEN-EN1825-1 and 2 requirements are fitted with a rating plate, which is permanently mounted to the grease traps in a clearly visible place. It lists some of the data of the grease traps, including nominal volume, volume of the sludge collection chamber and the maximum fat layer thickness.
By virtue of Article 6.24x of the Activities Decree, sludge collection pits and grease traps that were installed before 1 January 2008 are subject to NEN 7087 and not NEN-EN 1825. Article 3.131, paragraph 4, of the Activities Decree does not apply in that case. NEN 7087 does not prescribe a frequency for emptying and cleaning. Practice shows that emptying becomes necessary if the volume of the sludge collection pit has been filled for more than 50% or if the fat storage chamber has been filled for 80%. In the event of grease traps in accordance with the old NEN 7087, this corresponds to a fat layer thickness of 16 centimetres. The grease trap contains a number of vertical partitions. These partitions ensure that the sludge, fat and water separate from each other. In the first part of the grease trap, the sludge precipitates at the bottom. Fat is lighter than water and will start floating in the second segment. Finally, the water will be discharged to the public sewerage by means of an inspection drain.
